Chinese Cookies

CHINESE COOKIES (Hsng-Yen-Bang) -------------------------------------------------------------------------------- 2 1/2 c. flour 3/4 c. sugar 1/4 tsp. salt 3/4 c. oleo 1 egg, beaten 2 Tbsp. water 1 tsp. almond flavoring (sprinkle over mixture)

Sift into a large mixing bowl the flour, sugar and salt. Blend with pastry blender or with hands the oleo, egg, water and flavoring. Stir with fork until mixture leaves sides of bowl. Knead until smooth and chill 1 hour. Form balls about 1-inch in diameter. Flatten with palm of hand and press an almond into center of each cookie. Beat together yolk of one egg and 1 tablespoon water and brush over cookies. Bake at 350*F for 20 to 25 minutes or until light brown. Yield: about 3 dozen cookies.
