40 eggs seperated, Whip yolks with 1 1/2 lbs sugar. Stir in 1 1/4 cup heavy cream, fold in 2 lbs bread flour.

Whip the whites stiff and fold into yolk base.

Spread on the back of 7 greased/floured full sheetpans, bake 400 10-12 minutes.

Layer with choc buttercream but I prefer coffee with alternate layers of apricot. Top layer should be reserved for caramel or choc.
