Jason, select a firm style tofu. Soak it in any marinade of your choice, even canned chicken broth. After marinading, place the tofu between two towels and press out any excess moisture by placing a weight on it. Then cut the tofu into the desired shape and size and place in the freezer. This will give the tofu a firmer texture and enable it to hold up much better. After freezing just place it in your recipe as you would the chicken. Another option is using TVP Chuncks which are a textured vegetable protein product,(meat substitute) which also can be marinated in any sauce you wish. They are available in any health food store.
