I haven't tried this recipe myself but it comes from a reliable cookbook.

2 cups four

salt

3/4 cup chilled lard

6 tb. cold water (approx.)

3 cups crushed pineapple, drained

1 cup sugar

1/8 tsp. salt

3/4 cup water

3 1/2 tb. tapioca

2 tb. butter

Mix flour and 1 teaspoon salt together; cut in lard with 2 knives until lard is pea-size. Sprinkle with water, using only enough to hold dough together. Divide dough in half; roll to fit a 9-inch pie shell. Mix together pineapple, sugar, 1/8 teaspoon salt, 3/4 cup water and tapioca. Let mixture stand for 15 minutes. Place pineapple mixture in pie shell; dot with butter. Roll out remaining dough and cover the pie, sealing well. Cut slits in the top crust. Place on lower shelf of oven. Bake for about 40 to 45 minutes at 425° F.
