Hi Sienna,
If you ensure that your poundcake is wrapped airtight, it will stay fresh. A poundcake gets better after the first day and mellows because of the high eggs/butter content. If I were you I would wrap it in Saran Wrap and then in 2 layers of freezer paper (which is firmer and will protect the cake. I would put in in a larger box and use popcorn (unbuttered and unsalted) as a packing medium to keep the cake from shifting around.
