The true mexican flan recipe lies in the eyes of the beholder.Chiricaya is like a curdle flan, the texture and taste are very different. My flan recipe is :2cups whole milk,2 cups half& half, 6 eggs plus 4 yolks, 1 to 11/2 cups of sugar vanilla bean , dash of salt. Caramel a mold , heat milk,cream, then slowly add beaten eggs and sugar.mix well , strain Bain marie 350 for 1 hour.cool then refrigerate overnight.
