I would suggest freezing the sponge layers instead of freezing the cake all set up. Sponge freezes beautifully, just cool thouroughly, cut the skin off, and wrap well in plastic wrap. It helps to write the date on so you know how long it has been in your freezer. When you need the layers, just remove from freezer and let it sit out for an hour or so. Or better yet, take it out the day before and let it thaw in your fridge.
