It could be overmixed, if the dough develops any elasticity it will shrink. Grease the mold(to hold the dough during handling), dock it lightly to allow the steam to escape and prevent it from bubbling up. Mix the dough ...barely enough...don't form into balls, just put it away and chill thoroughly even if it takes 6 hrs. Don't form balls before rolling, thats the same as folding it over on itself, just cut a chunk and roll it.
