Yes Patty, You can make a fairly decent cake without eggs. Since eggs aerate the batter (the little bubbles expand in the baking) you need something to replace the eggs in order to give the cake lift. Usually you can accomplish this by adding one teaspoon of baking soda and one tablespoon of vinegar. If the liquid in your batter is water, simply add the vinegar to the water and the soda to the dry ingredients. If the liquid is milk, then make your own sour milk by adding the vinegar to the milk. If as a kid you did the "vinegar and baking soda" thing you will know how much fizz you can get from this mixture. The same thing happens in the cake batter.
