You didn't say what it is you use, get hold of some high quality couverture, callebaut, van leer or cocoa barry and you'll be OK. Also make sure they refer to cocoa and not cocoa butter. Cocoa butter is the defining ingredient( besides processing) , even choc chips are full of cocoa(but not much else of any use).

It just depends what you're trying to make.
