Gerard,If I boil the sea weed and use the water I have to reduce the water content in the formula, otherways the fondant will come very sticky, also is'nt agar-agar a see weed? so will be back to my first cuestion, how to use agar-agar as a subtitute for gelatine. Michelle, I don't buy the fondat, I make it my self, but I use gelatine, the only kosher gelatine we get here in Venezuela is the one from Israel, which is not strong at all, but if you know of any strong profecional kosher gelatine, please le me know.
