A design course is a good option for students who really don't have a knack for it. I do not think it should be a required course, especially since many of the students will go on to production-type work, and may have no interest in plating restaurant desserts, or arranging buffets. My own design education came from an academic university education, with a major in art and art history. I use a lot of what I learned about composition and color in my pastry work. Many people have a lot of trouble developing an eye for what looks good, and there is somewhat of a science to it, but it's also subjective. Better to leave design class as an option for those who have that interest.
