Thanks a million. None of my local suppliers carry non-reactive pans. Do any of you have a source for commercial size non- reactive pans?

My bakery is actually a lot cooler than my home kithcen ever was so I am don't think I am having a heat problem. However the "bowl friction" theroy is interesting.

I am going to look for the books you recommended.
