Here are some approximate weights-

1 cup flour = 5 oz.

1 cup granulated white sugar = 7 oz.

1 cup brown sugar, packed = 7.5 oz.

1 cup shortening = 6.75 oz.

You should get about 128 cups from a 40lb. bag of flour.
