1 pound = 16 oz. AP Flour 1c= 4.5 oz. Sugar(brown or white) 1c.= 7 oz. Shortening 1c. = 8 oz.

Convert the bag weight(either sugar or flour, usually comes in 50 # bags) into total number of ounces. Like a bag of flour would be 50 x 16 =800 oz. Divide this by 4.5 oz. and it will give you the number of cups in a 50# bag of flour(about 178cups). But to be more accurate you should just measure your ingredients by weight. Hope this helps.
