Cindy, this recipe is the only one I have come across so far that is anything like your request. You may be able to substitute the banana for pineapple. Angel

Palisades Fruit Puffs
6 large eggs 1 cup milk 1 cup flour 1/4 teaspoon salt 1/2 teaspoon vanilla 4 tablespoons margarine 1 tablespoon sugar Powdered sugar
Preheat oven to 425ºF. In a medium bowl, beat eggs with electric mixer on high speed until frothy (approx. 1 minute). Slowly add flour, beating on medium until blended. Stir in milk, salt, and vanilla. Melt butter in four 8" skillets. Pour egg mixture into hot skillets. Bake 12-15 minutes or until brown and puffed. Remove from oven and sprinkle with powdered sugar. Serve with your favorite filling.
Filling options:
Banana's Amaretto
2 tablespoons butter 1/4 cup Amaretto 1 tablespoon light brown sugar 4 firm bananas
Melt butter in a skillet. Add brown sugar and saute bananas until slightly soft, but not mushy. Gently stir in liqueur. Serve with whipped cream or sour cream. Sprinkle with nutmeg. Serves four.

Mandarin Orange Sauce
Combine 2 tablespoons sugar and 1 tablespoon corn starch. Stir in 3/4 cup water and 2 tablespoons frozen orange juice concentrate. Cook and stir until thick and bubbly. Cook and stir two more minutes. Add one 11-ounce can of mandarin oranges. Pour into puffs, top with whipped cream, sprinkle with sliced almonds, and enjoy!
