Here's an orange filling using eggs. I think when working with eggs, it's best to beat the eggs, then combine the other ingredients and heat; then add a little (spoonful or two)of the heated mixture to the beaten eggs and stir it in gently till blended.

Do this a couple of times to raise the temperature of the eggs so they don't curdle on you, leaving you with scrambled eggs a' la orange. Then you can add all the egg, stirring all the time.

I just mention it because this recipe has you putting everything together at once and boiling it which can be tricky.

Recipe is from Bon Appetit, as was the previous one. to make orange filling: In a heavy saucepan whisk together the sugar, the cornstarch, and a pinch of salt. In a bowl whisk together the zests, the juices, and the yolks and whisk the yolk mixture into the sugar mixture until the mixture is combined well. Bring the mixture to a boil, whisking, boil it gently, whisking, for 2 minutes, and let it cool, whisking occasionally.
