I have used this ingredient and found it more similair to the effects of cornstarch. I had used it in a pastry cream and had combined it with water in a pot and cooked it while stirring for about 5 - 10 minutes and then added it to the base. After it cooled, it resembled the same as cornstarch. Hope this helps you! Elaina
