We grew up with Mom's delicious potato candy and I'd be happy to share the recipe with you. Apparently this recipe has been around for years.

The recipe calls for a cooked potato, but not hot! (we always use left over potatoes from dinner the night before!)

Take 1 medium (cooked) potato and mash it with a fork.

Add confectioner's (powdered) sugar until the mixture becomes pastey.(it might take more than one box) (it will get runny before it gets pastey!)

Roll out onto a piece of wax paper that has been dusted with powdered sugar. (dust the rolling pin, too!)

Spread with your favorite peanut butter (we like crunchy) and roll-up like a jelly roll. Wrap with wax paper. Refrigerate until firm - about 1-2 hours. Cut into 1/2 inch slices and place on pretty serving plate!

I hope you like this recipe as it is very plain and simple - just like the olden days when it originated!
