CHESS PIE (Yield: 8 servings) ½ cup butter or margarine, softened 1¼ cups sugar 1 tablespoon cornmeal 3 eggs Grated rind and juice of 1 lemon 1 teaspoon vanilla extract 1 9-inch pie shell, unbaked

Preheat oven to 325°F.

In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in cornmeal. Add eggs, one at a time, beating well after each addition. Beat in lemon rind, juice, and vanilla. Pour into prepared pie shell.

Bake 40 to 45 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack.
