Single fold vanilla just means it doesn't require diluting, some desserts would use 3 fold to prevent the vanilla watering down the batter or if it was a mousse , for instance a mousse that is kinda sloppy would be better with 3 fold as would some cookie batters. Bourbon is probably the alcohol used to extract the flavor from the pods.
