I haven't tried this recipe, but it is from a good cookbook.

1 1/4 cups sugar

2 tbs. flour

1/8 tsp. salt

1/4 cup soft butter

3 eggs, well beaten (reserve 1 tsp. egg white)

1 lemon, peeled and thinly sliced

1 tsp. lemon zest

1/2 cup water

1 recipe for a 2-crust pie

a little sugar and cinnamon mixture

Combine sugar, flour and salt. Blend in butter. Add beaten eggs. Blend until smooth. Add sliced lemon, zest and sugar/flour mixture. Stir in water. Blend well. Turn into a pastry-lined pan. Top with second crust which has been slit to let steam escape. Seal edges. Brush with reserved egg white and sprinkle with sugar and cinnamon mixture. Bake at 400 degrees for 30-35 minutes.
