It comes in 25 and 50lb cases, loose packed in thin bars or chunks, the thin bars melt fastest. Oddly enough its rather expensive at $4+ lb, I can buy imported French couverture with high percent cocoa butter for almost half the price. It makes the best brownies, works great for flavoring fondant or pastry cream etc.
