Gerard, your expertise and words of wisdom have been very educating for me since I discovered this forum and I am very appreciative. However Gerard, I have to take you to task about this jam business. I agree that when you make jam the results are about as good as a good quality purchased product - so why bother, right? BUT, have you ever made jam according to the instructions on the CERTO package for refrigerator jam? Wow, what a treat! The jam does not suffer from being heated, therefore the color remains bright and the flavor is superb. I love watching my guests faces as they taste my jam on freshly made crumpets or English muffins. This technique is so easy and the jam will keep frozen with no deterioration at all for a good year.
