The easiest method is melt 1/2 cup choc and stir a few drops of heavy cream into it, keep adding a few drops at a time and it will start to thicken. Just be VERY wary of adding it too quickly as it will keep getting thicker and seize if you add too much, it might take less than 1/4 teaspoon depending what type of chocolate you start with. It will also slightly affect the color which is effective for creating contrast between the writing and the base,

water can be substituted but will not work as well as cream, one drop too much will ruin it.

Royal icing is also good for this.
