regarding rolled fondant: it is used extensively in English wedding cakes and does take some practice to do flawlessly. There are also special fondant tools to make decorative imprints. You can, of course, used royal icing. Your biggest problem with rolled fondant is that it should not be refrigerated or will begin to weep and shift. Our "friend" Martha has contributed to the rage for rolled fondant cakes...they look great but a thick fondant coating to a fabulous cake interior does nothing for me!
