You have to look at who's writing the recipe, I'm always suspicious of amateur recipes, I often see simple formulas convoluted by the authors desire to customize without regard for common sense, manay food writers try to make the ordinary unique and its only unique in its complexity...the results are no different. Hence, waste of time. Basic recipes which rely on skill rather than trick ingredients probably don't make for interesting reading.
