I understand your comments. I thought there must be a big reason for cooking candy for a long period of time and then addition practically by drops, the final cup of cream. I know what you mean about finding a recipe and perfecting it for your taste. I have had the same icing and several candy recipes for over 25 years, could make them in my sleep and when people ask me for the recipe, I find it hard to come right up with the answer - if I write it down, I usually leave somthing off since I have followed my head for so many years....Well, we are snowed in here in central Illinois today, so I'm making carmels...thanks for your help, Gerald...
