I have been asked to do groom's cake and wedding cake for 400 guests. I am in the bakery/pastry business and do many specialty cakes but have rarely branched into the wedding area, and not this number of people! Any suggestions on how to price this monster...priced per serving??...I will be doing a tira misu style grooms cake and a french buttercream/raspberry/almond cake wedding cake. Decorations will not be too elaborate but since I have no idea how much time this will take me...what do you suggest? Grazie!
