The best thing about culinary school is that (if you go to a good one), you'll have an opportunity to learn a little bit of everything, and you'll leave there with some understanding of every aspect of bakery work. The great schools also help you get your foot in the door of a job that you might not otherwise get (i.e. those jobs that prefer grads). On the other hand, there are tons of jobs out there that can provide you with the same experience and then some. It's up to you to find that job, however, and that can be tough. You'll gain experience anywhere you go, whether you go to school or not. By the way, most cooking schools are not great. If you choose one, make sure it's the right one. I've seen many grads who still didn't know how to dissolve gelatin or use a pastry bag! They wasted their money. The better schools are much more intensive, thorough, and rigorous. P.S.: don't trust any program that promises a complete baking education in a few weeks time. It takes time and practice to become efficient and confident. A 1 or 2 year program is always better than a shorter one.
