In Hawaii we eat something called Haupia which is probably pretty close to what you're looking for. Unfortunately, the only recipe I could find for it is pretty vague but I will give it to you exactly as the recipe reads.

Cook over medium heat in a teflon pan 2 cans coconut milk 1 cup sugar 1 cup water Add: 7 tbsp cornstarch 1 pkg. gelatin 1/3 cup water
