What you are making, basically, is a Petit Four (pronounced petty' fwa) French for small square. I suggest using white chocolate twills. Start with a white choc. ganache, poor evenly on marble pastry board, cool and using small icing spatula or metal straight edge and roll up desired size of curl. drizzle with dark bittersweet choc. using a small spoon or knife. Top with a red raspberry. EYE POPPING!!!
