Try Joy of Cooking, see oil cakes, carrot, recipe II (i, think.but seall carrotcake recipes and you decide. Asm far as the glaze goes, use a simple syrup (lightly) before "crumbing" the Icing layers. One can also add flavor extracts to the simple syrup. Good luck!
