You can use light corn syrup (dark will effect the color of the white ganache)...it just gives the ganache a little nicer shine. Opera glaze is the finish on top of chocolate opera. I don't have the recipe with me right now but I have used half couverture and half clarified butter before and it works well. Use it as you would any other glaze. If you want the opera glaze recipe just email me and I will make a point of getting it to you.
