Dump the springform pan, use a regular cake mold and place in a water bath. Remove from oven when a toothpick just starts to almost come out dry and let cool then chill COMPLETELY overnite. Invert on a plate and flip back on a second plate or whatever its going on. You might need to warm the bottom of the mold before removing, I put it on the gas flame until it feels warm. Springforms are not for cheesecake, they are best suited for mousse cakes or something that isn't going in the oven...therefore will not shrink during baking, cheesecake shrinks about 2% and pulls away from the sides of the mold during cooling.
