'tis kind of overdone, but still eye catching & pretty easy to do. What about covering your "bite" with a caramel cage? Coat a soup ladle lightly with oil, carmelize some sugar & drizzle lines over the back of the ladle to create an open "weave". Invert this puppy over your bite, stick a couple of your candied violets on top & voila- simple yet elegant. Humidity can be a huge problem, though! Use "ruth" edible laquer (sp?) on your sugar creations, & store them in an airtight container with limestone or other dessicant. (available thru Albert Uster or ... I think it's "R.J." Prince in new york) Yes, to candy, lightly brush flower with egg white & dip in superfine sugar. Lavender, rose petals, pansies, & johnny jump ups are all edible.

If sugar is too big a pain to deal with, you can also do a cage with tempered chocolate or coating chocolate.
