Sorry it took so long to get back to you, gerard! It's been one private party after another at my restaurant. Great for the owner in january & february when it's slow, but for the only one making pastries, adding 100 or more desserts per week to my existing workload means no time to play on the net! Did a couple of things with the choc marzipan- Cut a disc w/a fluted cutter, sat a choc. lace cup atop, filled it with a scoop of choc. granita & stuck a triangular choc. tuille atop as one element of a choc sampler plate. Also did roses with it to top an amaretto choc mousse birthday cake. Yes, I know I can use modeling chocolate, but choc marzipan tastes good & modeling doesnt. I was still able to make roses with the oily marzipan- It held enough to be smooth & malliable, they were just very shiny roses & I had to cornstarch my fingers alot. Thanks for the fondant tip- I'll try it!
