Most valentine buyers are guys and guys are cheapskates. So, I make heart shaped cookies for $1 and they scoff em up (I think they eat them themselves). I cut sable' dough into heart shapes, cut a smaller heart shape out of the middle of half the batch and sandwiche together with rasp jam, dust with XXXX sugar. I've often thought about doing chocolate roses but judging from the number of guys who want a plain croissant in a box with a ribbon wrapped around ; I think it would be "spreading pearls before swine".
