Look for cakes where the eggs are seperated, not a sponge but a cake with shortening and sugar beaten and yolks go in the batter with flour, finish by folding in the whipped egg whites, very moist without resorting to pudding type concoctions.

Chewey cookies are often just underbaked. Take out of oven when still very soft, they'll collapse but...

Pullman bread made with milk and butter is the best soft crusted bread you can make. Do a search in infoseek "pullman bread recipe" and it should find you plenty.
