If you like cream cheese and chocolate than you will enjoy this recipe.

Black Bottom Cheese Cupcakes

1 1/2 cups sifted flour, 1 cup sugar, 1/4 cup cocoa, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 cup water, 1/3 cup oil, 1 tablespoon vinegar and 1 teaspoon vanilla

Sift together dry ingredients. Add water, oil, vinegar and vanilla. Beat until well combined.

Filling~ 1 - 8 oz. cream cheese (softened at room temp.), 1 egg (unbeated), 1/3 cup sugar, 1/8 teaspoon salt, 6 oz. semi sweet chocolate chips and 2 teaspoons lemon juice.

Combine first 4 ingredients. Beat well. Stir in lemon juice and chocolate chips.

Fill muffin cups (any size cups you desire) 1/3 full with chocolate batter. Top each cupcake with a heaping tablespoon of cream cheese filling and 3 or 4 extra chips. They are ready for baking. Oven temp. 350. Small cupcakes should take 15 to 18 minutes and regular size 20 to 25 minutes.

Dust the cooled cupcakes with powdered sugar just before serving.

*If I'm in a hurry I just use my favorite box choclate cake mix. It is just as flavorful. I usually am asked for the recipe even if I use the boxed cake mix.
