Do you use eggs? 1 pound ricotta cheese, 3 eggs, 1/2 cup grated Parmesan or Romano cheese, and salt to taste.

Do you taste it before filling the pasta? If not then you're to blame, don't let recipes be handcuffs, testing before filling will save a lot of time.
