re:sopapilla...I believe that you may be looking for the puffy, yeast dough version? There are an infinite # of recipes, but any white bread dough high in gluten will do, rolled out, cut in small squares, deep fried, then tossed in cin./sugar, dunked in honey, or plain with preserves. These are what I have always known as "real" sopapilla.
