I have this recipe for Uk basic pork sausages. 1lb pork shoulder without rind or bone. 8oz hard back fat 1oz soft breadcrumbs plus milk to moisten. salt. freshly ground white pepper. 1tsp mixed, grated nutmeg, ground mace & corriander. 1/2 tsp dried sage. sausage casings or egg and breadcrumbs. mince the pork & fat 2xs mix together with other ingred, well. Fry alittle and taste test. Adjust seasonings Refridgerate 15min then fill casings or shape and dip in egg and breadcrumbs. Hope this tastes as good as the real bangers back home!! Good luck
