I have had the same thing happen to me. It occurs when it has been over worked and just as you guessed the emulsion was lost. There is also no way, that I am aware of, to fix it. The addition of powdered sugar makes it sticky, corn starch alters the integrity of the marzipan, and kneading more into the "broken" one drastically decreases the amount workability you get before it breaks again.
