Topic: bakery style brownies (with sugar on the bottom)

I remember as a child going with my mother to the neighborhood grocery store (Big Star). I'm from Memphis, TN. The best brownies I have ever eaten were not cake like but flatter with chocolate icing and granulated sugar on the bottom of each brownie. I would love to get the recipe for these brownies. I hope someone can help. Thanks!

Look for brownie recipes that call for very little flour (1/2 cup or less per 8" square pan) to get the fudgy texture you're thinking of; then you could use choc chips or thin choc bars for the icing (put it/them on when the brownie is still warm and it will melt with a little bit of smoothing). When they are cut, dip the bottoms in sugar. Maida Heatter is a terrific source for brownie recipes (she's written 7 or 8 dessert books)- her Palm Beach Brownies are legendary, or you could google the recipe for Katharine Hepburn's brownies (thinner than the Palm Beach ones). |
