I'm having a fall wedding and planning on a "cupcake" wedding cake. I'm toying with the idea of making my own cupcakes. Any suggestions or experiences you would be willing to share?

As you are the bride I would not recommend doing this (as you will have so many others to do the day before the wedding.
If you decide to do it, then may I suugest you bake the cup cakes a head of time and freeze. Ideally the cup cakes should fill the paper cup and be level and be a perfect round. Icing - buttercream (time consumming) or poured fondant (requires skill/knowledge in handing), rolled fondant (time consumming and a lot of people do not like the taste).

I made my own wedding cake many many years ago. It was a four tier white chocolate cake with raspberry buttercream covered in fondant; with marzipan roses. I had way too much else to do in those days before the wedding (confirming vendors, dealing with relatives, seating plans, you name it it happened!) and doing my own cake on top off all that was more stress than I wish I had been dealing with (then I had to figure out how to get it to the reception site!). I very much wish I hadn't done it because I was too stressed out having to attend to so many details and then try to focus on the cake.

Now that I'm in business for myself with my own bakery, I bake the wedding cupcakes for the cupcake "trees" the day of the wedding so they're very fresh and the edges don't dry out. Freezing would work if you decide to go ahead with doing the cupcakes, dont' forget to arrange for how and who will set up the cupcakes, what will happen if any are damaged, etc. I would recommend that you swirl or smooth buttercream on the top, then add a marzipan flower or fresh, organic, edible flower to the top. This will cut down on the stress and the decorating time. You could purchase beautiful crystallized flowers from Meadowsweets if the idea interests you (www.candiedflowers.com) but realize that the daisies are fragile.

Thanks for the suggestions - I am checking with some bakers in my area to see about someone else baking the cupcakes. NOTE to self.....you need to give up control to others! LOL
