My daughter is VERY allergic to eggs. However, she LOVES pumpkin pie. Can anyone tell me a recipe to try that tastes like pumpkin pie, but doesn't use eggs?

Tofu Pumpkin Pie
1 can (16 ounces) pureed pumpkin
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 package (10-12 ounces) soft tofu, processed in blender until smooth
1 9-in unbaked pie shell

Preheat oven to 425 F.
Cream the pumpkin and sugar. Add salt, spices, and tofu, mix thoroughly until smooth. Pour mixture into pie shell and bake for 15 minutes. Lower heat to 350 F and bake for another 40 minutes. Chill and serve.
Top with non dairy topping.
Serves: 8

Have you tried duck eggs? Or Egg Replacer by Ener-G-Foods? I have found with the egg replacer that I need to use more powder than recommended. I also will almost always beat it on high in a mixer before adding to recipes. Duck eggs--according to our doctor, duck eggs and chicken eggs are dissimilar enough that a problem with one shouldn't present a problem with another--something to PLEASE talk to your doctor about--don't take my doctor's word for it. They can be purchased from a good Asian food store or maybe from an individual with ducks. Some Asian markets sell two different forms of duck eggs, so be sure you are getting fresh eggs.

I believe they still sell substitute eggs. They are liquid or powder(to dilute) They are fake imitation eggs. Try looking in any grocery store, they should have something, or call around to the stores, it would save you time OK? Good luck.
